Instructions
- Preheat the oven to 350°F and line a pie pan with parchment paper.
- Blend the milk, eggs, maple syrup, vanilla, and butter until smooth.
- In a separate bowl, sift together the coconut flour and arrowroot flour, then mix in the sugar, cinnamon, ginger, salt, and baking powder.
- Combine the wet and dry ingredients until smooth.
- Fold in the diced apple and coconut flakes.
- Pour the batter into the prepared pan, add sliced apples and pecans on top.
- Bake for 45-50 minutes, then cover with foil and bake for an additional 15-20 minutes until the center is set.
- Let the pie cool for 10 minutes before serving.
