Ingredients

The pie filling

  • 1 cup unsweetened almond or coconut milk
  • 4 large eggs
  • 3 Tablespoons melted butter or refined coconut oil
  • 2 Tablespoons maple syrup
  • 1 teaspoon vanilla (optional)
  • 3 Tablespoons sifted coconut flour
  • ½ cup arrowroot flour (or tapioca flour)
  • cup coconut or raw sugar
  • ¼ teaspoon kosher salt
  • 2+ teaspoons ground cinnamon
  • 1 pinch ground ginger
  • 1 teaspoon baking powder
  • ½ cup unsweetened shredded coconut flakes
  • 1 cup peeled/sliced apple (extra slices for topping)

Optional toppings

  • to taste extra apple slices
  • to taste glazed pecans or walnuts

Instructions

  1. Preheat the oven to 350°F and line a pie pan with parchment paper.
  2. Blend the milk, eggs, maple syrup, vanilla, and butter until smooth.
  3. In a separate bowl, sift together the coconut flour and arrowroot flour, then mix in the sugar, cinnamon, ginger, salt, and baking powder.
  4. Combine the wet and dry ingredients until smooth.
  5. Fold in the diced apple and coconut flakes.
  6. Pour the batter into the prepared pan, add sliced apples and pecans on top.
  7. Bake for 45-50 minutes, then cover with foil and bake for an additional 15-20 minutes until the center is set.
  8. Let the pie cool for 10 minutes before serving.
