Ingredients

The pie crust

The apple pie filling

  • 8 medium or 5 large apples, cored, peeled, and sliced
  • cup cane or coconut sugar
  • 3 tablespoons gluten-free flour blend
  • 2 teaspoons ground cinnamon
  • 1 teaspoon pure vanilla extract
  • 2 tablespoons lemon juice

The crumb topping

  • ½ cup gluten-free flour blend
  • 3 tablespoons cane or coconut sugar
  • 1 tablespoon brown sugar
  • 1 teaspoon ground cinnamon
  • 4 tablespoons butter, cold and cut into pieces

Instructions

  1. Prepare the pie crust if not already done, either unbaked or parbaked for 15-20 minutes.
  2. Preheat the oven to 400°F.
  3. In a large bowl, combine the sliced apples with sugar, flour, cinnamon, vanilla, and lemon juice, then let sit for 20-30 minutes.
  4. In another bowl, mix the ingredients for the crumb topping until it forms a crumble.
  5. Transfer the apple filling into the pie crust, spread evenly, and top with the crumble mixture.
  6. Bake for 40-50 minutes until golden brown, covering the crust edges if they brown too quickly.
  7. Allow the pie to cool before slicing.
