Apple Crisp Bars

Ingredients

The bars

  • 2 sticks unsalted butter
  • 4-5 pieces honeycrisp or granny smith apples, chopped
  • cup light brown sugar
  • 2 tablespoons light brown sugar
  • 3 cups old fashioned oats
  • cups white whole wheat flour or whole wheat pastry flour
  • teaspoons cinnamon
  • ½ teaspoon baking soda
  • ¾ cup pecans
  • cup unsweetened shredded coconut (optional)
  • ½ cup pure maple syrup
  • 2 teaspoons vanilla extract

The glaze

  • 3 tablespoons mascarpone or cream cheese, softened
  • 3 tablespoons pure maple syrup
  • ½ teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F and prepare a 9x13 inch baking dish.
  2. Melt 14 tablespoons of butter in a skillet over medium heat until browned and set aside.
  3. In the same skillet, melt the remaining butter and cook the apples with brown sugar and cinnamon until caramelized.
  4. Combine the remaining brown sugar, oats, flour, cinnamon, baking soda, pecans, coconut, maple syrup, and vanilla with the browned butter.
  5. Press most of the mixture into the bottom of the baking dish, layer the caramelized apples on top, and sprinkle the remaining oat mixture over the apples.
  6. Bake for 30-35 minutes until golden and crisp on top, then cool before cutting.
  7. For the glaze, mix mascarpone, maple syrup, and vanilla until smooth and drizzle over the bars before serving.
