Instructions
- Preheat the oven to 325°F.
- Cream butter and brown sugar until fluffy, then add the egg yolk and mix until fluffy.
- Mix in flour, cornstarch, and salt until the mixture forms small pea-sized balls.
- Press the mixture into an ungreased 8-inch brownie or cake pan and bake for 10 minutes.
- Allow the shortbread to slightly cool.
- In another bowl, whip mascarpone, honey, egg, and vanilla until fluffy.
- Pour the mascarpone mixture onto the cooled crust and spread evenly.
- Toss apple slices, oats, melted butter, honey, and cinnamon until combined.
- Arrange the apple mixture on top of the mascarpone filling and sprinkle with remaining oats.
- Bake for 30-40 minutes until the filling is set.
- Cool completely in the refrigerator or freezer before slicing.
