Ingredients

Crust

  • 1 cup whole wheat pastry flour or all purpose flour
  • ½ tsp fine sea salt
  • ¼ cup refined coconut oil, melted and cooled
  • ¼ cup ice water

Filling

  • 6 medium to large apples, peeled and thinly sliced
  • 1 tbsp fresh lemon juice
  • ½ cup cane sugar
  • 3 tbsp whole wheat pastry flour or all purpose flour
  • 1 ½ tsp cinnamon

Crumb Topping

  • ¾ cup whole wheat pastry flour or all purpose flour
  • cup chopped pecans
  • cup coconut sugar
  • ¼ tsp fine sea salt
  • 1 tsp cinnamon
  • cup refined coconut oil

Instructions

  1. Preheat the oven to 425°F and prepare a 9-inch pie pan.
  2. Mix the crust ingredients and either roll out the dough or press it into the pie dish.
  3. Combine the filling ingredients and place them in the unbaked pie crust.
  4. Prepare the crumb topping by mixing its ingredients, then add the coconut oil and combine until crumbly.
  5. Spread the crumb topping over the apple filling, pressing it down slightly.
  6. Bake the pie for 15 minutes at 425°F, then cover with foil and reduce the temperature to 350°F for another 45-55 minutes.
  7. Let the pie cool completely on a wire rack for about 3 hours before slicing.
