Ingredients

Shortbread Crust

  • ½ cup unsalted butter, melted
  • ¼ cup granulated sugar
  • 1 teaspoon pure vanilla extract
  • ¼ teaspoon salt
  • 1 cup all-purpose flour

Apple Filling

  • 2 large apples, peeled and thinly sliced
  • 2 tablespoons all-purpose flour
  • 2 tablespoons granulated sugar
  • 1 teaspoon ground cinnamon
  • teaspoon ground nutmeg

Streusel Topping

  • ½ cup old-fashioned whole rolled oats
  • cup packed light or dark brown sugar
  • ¼ teaspoon ground cinnamon
  • ¼ cup all-purpose flour
  • ¼ cup unsalted butter, cold and cubed
  • to taste homemade salted caramel or store-bought caramel sauce

Instructions

  1. Preheat the oven to 300°F (149°C) and prepare an 8-inch square baking pan with parchment paper.
  2. Make the shortbread crust by mixing melted butter, granulated sugar, vanilla, and salt, then adding flour and pressing into the pan. Bake for 15 minutes.
  3. Prepare the apple filling by combining sliced apples with flour, sugar, cinnamon, and nutmeg in a bowl.
  4. Make the streusel topping by whisking oats, brown sugar, cinnamon, and flour, then cutting in the cold butter until crumbly.
  5. Increase the oven temperature to 350°F (177°C), layer the apple filling over the crust, and sprinkle with streusel. Bake for 30-35 minutes until golden brown.
  6. Cool the bars for at least 20 minutes, then chill in the refrigerator for at least 2 hours.
  7. Cut into bars and drizzle with salted caramel before serving.
