Instructions
- Preheat the oven to 350°F and line a 9x13-inch pan with foil, greasing it lightly.
- Mix the chopped apples with sugar, cinnamon, and nutmeg in a small bowl and set aside.
- Combine all streusel topping ingredients in a medium bowl until crumbly and set aside.
- In another bowl, mix flour, brown sugar, salt, and cinnamon for the shortbread base, then cut in the butter until crumbly. Press this mixture into the prepared pan and bake for 10 minutes.
- For the cream cheese layer, beat cream cheese and sugar until smooth, then add eggs one at a time and vanilla. Pour over the warm crust.
- Spoon the apple mixture over the cream cheese layer, then sprinkle the streusel topping on top.
- Bake for 30-35 minutes until the filling is set.
- To make the caramel sauce, combine butter, brown sugar, cream, and salt in a saucepan over medium-low heat. Simmer while stirring until thickened, then add vanilla.
- Cool the bars to room temperature and drizzle with the caramel sauce before serving.
