Ingredients

The crust

  • 2 cups flour
  • ½ cup packed brown sugar
  • ¾ cup cold butter

The cheesecake layer

  • 2 8-oz packages cream cheese
  • ½ cup sugar
  • 2 tablespoons sugar
  • 1 teaspoon vanilla
  • 2 large eggs

The apple layer

  • 3 medium tart apples
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg

The streusel topping

  • ¾ cup flour
  • ¾ cup packed brown sugar
  • ½ cup quick-cooking oats
  • cup butter

The caramel topping

  • cup caramel syrup

Instructions

  1. Preheat the oven to 350°F.
  2. Mix flour and brown sugar, then cut in butter until crumbly.
  3. Press the mixture into a greased 13x9 baking pan and bake for 15-18 minutes until lightly browned.
  4. In a large bowl, beat cream cheese, ½ cup sugar, and vanilla until smooth, then add eggs and mix until combined.
  5. Spread the cream cheese mixture over the crust.
  6. Toss chopped apples with cinnamon, nutmeg, and remaining sugar, then spoon over the cream cheese layer.
  7. In another bowl, mix flour, brown sugar, and oats, then cut in butter until crumbly and sprinkle over the apple layer.
  8. Bake for 25-30 minutes until the filling is set.
  9. Drizzle with caramel topping and cool in the pan for 1 hour before refrigerating for at least 2 hours.
  10. Cut into bars and serve.
