Instructions
- Preheat the oven to 350°F and prepare a 7x5-inch baking dish.
- Mix the butter, powdered sugar, and granulated sugar until fluffy, then add vanilla, flour, and salt.
- Press the shortbread mixture into the baking dish and bake for 18 to 21 minutes until lightly browned.
- Combine diced apples, sugar, flour, cinnamon, and lemon juice for the apple layer and set aside.
- Mix flour, brown sugar, and butter for the streusel topping until crumbly, then refrigerate.
- Spread the apple mixture over the baked shortbread, top with streusel, and bake for an additional 15 to 20 minutes.
- Allow to cool completely before cutting into bars.
