Ingredients

Shortbread Base

  • ¼ cup unsalted butter, softened
  • ¼ cup powdered sugar
  • 1 tablespoon granulated sugar
  • 1 teaspoon granulated sugar
  • 2 teaspoons vanilla extract
  • ½ cup all-purpose flour
  • ¼ teaspoon salt

Apple Layer

  • 1 large Granny Smith apple, peeled and diced
  • 2 teaspoons granulated sugar
  • 2 teaspoons all-purpose flour
  • ½ teaspoon ground cinnamon
  • ½ teaspoon lemon juice (optional)

Brown Sugar Streusel

  • ¼ cup all-purpose flour
  • 3 tablespoons brown sugar
  • 2 tablespoons unsalted butter, softened

Instructions

  1. Preheat the oven to 350°F and prepare a 7x5-inch baking dish.
  2. Mix the butter, powdered sugar, and granulated sugar until fluffy, then add vanilla, flour, and salt.
  3. Press the shortbread mixture into the baking dish and bake for 18 to 21 minutes until lightly browned.
  4. Combine diced apples, sugar, flour, cinnamon, and lemon juice for the apple layer and set aside.
  5. Mix flour, brown sugar, and butter for the streusel topping until crumbly, then refrigerate.
  6. Spread the apple mixture over the baked shortbread, top with streusel, and bake for an additional 15 to 20 minutes.
  7. Allow to cool completely before cutting into bars.
