Ingredients

Pie Dough

  • 2 ½ cups all-purpose flour
  • ½ teaspoon table salt
  • 1 tablespoon granulated sugar
  • 8 oz butter, chilled and cut into small cubes
  • ½ cup very cold ice water

Pie Filling

  • 7 large Granny Smith apples, peeled, cored, and sliced into ½ inch slices
  • ½ cup granulated sugar
  • ½ cup light brown sugar
  • 2 tablespoons all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1 tablespoon lemon juice
  • 1 teaspoon lemon zest
  • 1 large egg, lightly beaten for egg wash
  • 2 tablespoons pearl or sanding sugar (optional for decorating pie)

Instructions

  1. Combine flour, sugar, baking powder, and salt in a food processor and pulse to mix.
  2. Add cold butter and pulse until the mixture resembles pebble-sized pieces.
  3. Add ice-cold water and pulse until the dough forms a ball.
  4. Turn the dough onto a floured surface, divide into two balls, flatten into discs, wrap in plastic, and chill.
  5. Preheat the oven to 400°F.
  6. In a large bowl, mix apple slices with granulated sugar, brown sugar, flour, cinnamon, lemon juice, and lemon zest.
  7. Roll out one disc of dough into a 12-inch circle and place it in the pie pan.
  8. Fill the crust with the apple mixture, discarding excess juices.
  9. Roll out the second disc and cover the pie filling with it, sealing the edges.
  10. Cut slits in the top crust for steam to escape and brush with egg wash.
  11. Bake for 25 minutes, then reduce temperature to 375°F and bake for an additional 30-35 minutes until golden brown.
  12. Cool the pie on a wire rack for at least 3 hours before serving.
