Easy Homemade Apple Pie

Instructions
- Combine flour, sugar, baking powder, and salt in a food processor and pulse to mix.
- Add cold butter and pulse until the mixture resembles pebble-sized pieces.
- Add ice-cold water and pulse until the dough forms a ball.
- Turn the dough onto a floured surface, divide into two balls, flatten into discs, wrap in plastic, and chill.
- Preheat the oven to 400°F.
- In a large bowl, mix apple slices with granulated sugar, brown sugar, flour, cinnamon, lemon juice, and lemon zest.
- Roll out one disc of dough into a 12-inch circle and place it in the pie pan.
- Fill the crust with the apple mixture, discarding excess juices.
- Roll out the second disc and cover the pie filling with it, sealing the edges.
- Cut slits in the top crust for steam to escape and brush with egg wash.
- Bake for 25 minutes, then reduce temperature to 375°F and bake for an additional 30-35 minutes until golden brown.
- Cool the pie on a wire rack for at least 3 hours before serving.
