Simple Veggie Mash

celery root (peeled and cut into ½-inch dice)

thyme (stems discarded + extra for garnish, if desired)

The butter

butter (divided)
Instructions
- Melt 3 tablespoons of butter in a pot over medium-high heat.
- Add the diced root vegetables, garlic, and thyme, cooking until softened for about 10 minutes.
- Stir in honey and combine, then add water and bay leaf.
- Reduce heat to low, cover, and simmer for 10 to 12 minutes until veggies are tender and water is mostly absorbed.
- Remove the bay leaf, add the last tablespoon of butter, and mash until chunky.
- Garnish with extra thyme if desired and serve warm.
