Simple Veggie Mash

Ingredients

The mash

  • ½ pound carrots (peeled and cut into ½-inch dice)
  • ½ pound butternut squash (peeled and cut into ½-inch dice)
  • ½ pound parsnips (peeled and cut into ½-inch dice)
  • ½ pound celery root (peeled and cut into ½-inch dice)
  • 5 cloves garlic (crushed)
  • 2 springs thyme (stems discarded + extra for garnish, if desired)
  • 1 tablespoon honey
  • 1 cup water
  • 1 leaf bay

The butter

  • 4 tablespoons butter (divided)

Instructions

  1. Melt 3 tablespoons of butter in a pot over medium-high heat.
  2. Add the diced root vegetables, garlic, and thyme, cooking until softened for about 10 minutes.
  3. Stir in honey and combine, then add water and bay leaf.
  4. Reduce heat to low, cover, and simmer for 10 to 12 minutes until veggies are tender and water is mostly absorbed.
  5. Remove the bay leaf, add the last tablespoon of butter, and mash until chunky.
  6. Garnish with extra thyme if desired and serve warm.
