Ginger Peanut Lentil Burgers

Ingredients

  • 1 large carrot, grated
  • ½ cup cilantro, chopped
  • 1 tbsp fresh grated ginger
  • 2 tsp garlic, minced
  • 1 jalapeño de-seeded and chopped
  • 2 ½ cups cooked lentils
  • 2 eggs
  • 2 tbsp reduced-sodium soy sauce
  • 1 ½ tbsp peanut butter
  • cup whole-grain breadcrumbs

Instructions

  1. Heat a large skillet over medium heat and spray with olive oil.
  2. In a food processor, combine grated carrot, cilantro, ginger, garlic, and jalapeño. Pulse until combined.
  3. Add the remaining ingredients and process until well-combined but still textured.
  4. Form the mixture into 5 burger patties.
  5. Cook the burgers for 5-6 minutes on each side or until golden.
