Ingredients

The sliders

  • 1 whole carrot
  • 1 cup kale, packed
  • 2 cloves garlic
  • 1 15oz can chickpeas, drained
  • cup old-fashioned oats
  • 1 whole egg
  • 2 tbsp peanut butter
  • 2 tsp fresh ginger
  • 1 tbsp reduced sodium soy sauce
  • 2 tsp lime juice
  • pinch red chili pepper flakes (optional)

The cashew cream

  • cup raw cashews
  • 6 tbsp unsweetened almond milk
  • 3 tbsp lime juice
  • 1 tsp pure maple syrup or agave
  • pinch salt

Instructions

  1. Heat a skillet over medium heat.
  2. In a food processor, pulse carrot, kale, and garlic until finely chopped.
  3. Add chickpeas, oats, egg, peanut butter, ginger, soy sauce, lime juice, and red pepper flakes to the processor and pulse to combine, keeping it chunky.
  4. Spray the skillet with cooking spray and form the mixture into 6-8 sliders.
  5. Cook the sliders for about 5 minutes until browned, then flip and cook for an additional 3 minutes.
  6. To make the cashew cream, blend cashews, almond milk, lime juice, maple syrup, and salt until smooth.
  7. Serve the sliders on greens or whole-grain buns with the cashew cream.
