The Pineapple Slaw

mashed

crushed pineapple, drained

purple cabbage, shredded

Instructions
- Make the pineapple slaw by combining mashed avocado, crushed pineapple, torn cilantro, agave, lime juice, and apple cider vinegar in a bowl, whisking until creamy. Stir in shredded cabbage and season with salt and pepper.
- Prepare the BBQ chickpeas by adding chickpeas, BBQ sauce, garlic powder, and chili powder to a saucepan. Cook over medium heat for 10-15 minutes, smashing half of the chickpeas while stirring. Add water as needed to prevent sticking.
- Assemble the sliders by spreading BBQ chickpeas on the bottom of each slider bun, topping with pineapple slaw, and sprinkling with roasted sunflower seeds if desired.
