BBQ Chickpea Sliders with Pineapple Slaw

Ingredients

The sliders

  • 15 ounces canned chickpeas, rinsed and drained
  • ½ cup BBQ sauce
  • ½ teaspoon garlic powder
  • ¼ teaspoon chili powder
  • to taste sea salt
  • 12 slider buns gluten-free if needed
  • 1 cup Pineapple Slaw
  • to taste roasted sunflower seeds (optional)

The Pineapple Slaw

  • ½ ripe avocado mashed
  • cup crushed pineapple, drained
  • 2 tablespoons cilantro leaves, torn
  • ½ tablespoon agave
  • 1 lime juiced
  • ½ teaspoon apple cider vinegar
  • 2 cups purple cabbage, shredded
  • to taste sea salt and pepper

Instructions

  1. Make the pineapple slaw by combining mashed avocado, crushed pineapple, torn cilantro, agave, lime juice, and apple cider vinegar in a bowl, whisking until creamy. Stir in shredded cabbage and season with salt and pepper.
  2. Prepare the BBQ chickpeas by adding chickpeas, BBQ sauce, garlic powder, and chili powder to a saucepan. Cook over medium heat for 10-15 minutes, smashing half of the chickpeas while stirring. Add water as needed to prevent sticking.
  3. Assemble the sliders by spreading BBQ chickpeas on the bottom of each slider bun, topping with pineapple slaw, and sprinkling with roasted sunflower seeds if desired.
