Ingredients

BBQ Beans

  • 1 Tbsp olive oil
  • 1 small yellow onion
  • 1 clove garlic
  • 1 15oz. can black beans
  • 1 15oz. can pinto beans
  • ½ cup BBQ sauce
  • ½ tsp smoked paprika (optional)
  • 4 pieces hamburger buns

Creamy Coleslaw

  • ½ 14oz. bag coleslaw mix (shredded cabbage, about 3 cups)
  • 3 pieces green onions
  • cup mayonnaise
  • ½ Tbsp honey
  • 1 tsp Dijon mustard
  • 1 tsp red wine or apple cider vinegar
  • ¼ tsp salt
  • to taste freshly cracked black pepper

Instructions

  1. Dice the onion and mince the garlic, then cook them in olive oil until soft.
  2. Rinse and drain the black and pinto beans, then add them to the skillet with BBQ sauce and smoked paprika.
  3. Heat the bean mixture over medium-low heat until warmed through.
  4. Prepare the coleslaw by mixing the cabbage, green onions, and dressing made from mayonnaise, honey, Dijon, vinegar, salt, and pepper.
  5. Assemble the sliders by adding BBQ beans to each bun and topping with coleslaw.
