Instructions
- Optionally freeze the tofu a day before, then thaw and press to remove excess water.
- Chop the pressed tofu into random ½-inch pieces and place in a bowl.
- Mix smoked paprika, garlic powder, salt, and pepper in a separate bowl and sprinkle over the tofu, stirring gently to coat.
- Add cornstarch to the tofu in three increments, folding gently to coat each time.
- Heat cooking oil in a skillet over medium heat and add the tofu, cooking for about 10 minutes until firm and darkened.
- Remove from heat and stir in BBQ sauce to coat the tofu.
- Prepare the coleslaw by mixing mayonnaise, honey, Dijon, vinegar, salt, and pepper in a bowl, then add the cabbage and stir to coat.
- Assemble the sliders by placing tofu on each bun, adding more BBQ sauce, and topping with coleslaw.
