Ingredients

Sauce

  • 6 Tbsp. hoisin sauce
  • ¼ cup toasted sesame oil
  • 2 Tbsp. ketchup
  • 1 Tbsp. agave nectar or mild honey
  • 1 Tbsp. soy sauce
  • ½ tsp. five-spice powder
  • ½ tsp. garlic powder

Tofu

  • 2 14–16-oz. packages extra-firm tofu

Buns and Condiments

  • 12 pieces soft Steamed Bao
  • 1⅓ cups drained Ðồ Chua Pickle
  • to taste Viet Chile Sauce, sriracha, or jalapeños
  • 2 pieces Persian cucumbers, thinly sliced
  • ½ cup cilantro leaves with tender stems
  • to taste Umami QP Mayonnaise
  • to taste Maggi Seasoning, Bragg Liquid Aminos, or soy sauce

Instructions

  1. Mix the hoisin sauce, toasted sesame oil, ketchup, agave nectar or honey, soy sauce, five-spice powder, and garlic powder in a bowl to create the char siu sauce.
  2. In a skillet, mix 2 Tbsp. of char siu sauce with 1 Tbsp. water. Drain and slice the tofu into rectangles, then cook in the skillet until browned and coated with sauce.
  3. Repeat the cooking process with the second package of tofu.
  4. Assemble the sliders by spreading mayonnaise on the bao, adding soy sauce, a slice of tofu, char siu sauce, pickles, chile sauce, cucumbers, and cilantro.
