Ingredients

The Tacos

  • 1 15 ounce can cooked chickpeas, rinsed and drained
  • ΒΌ cup BBQ sauce
  • 5 10 inch soft taco shells
  • to taste lime wedges

The Slaw and Onions

  • to serve Kale Cabbage Slaw
  • to serve Quick Pickled Onions

Instructions

  1. Cook the chickpeas with BBQ sauce in a small pot over medium heat for about 5 minutes until warm and sticky.
  2. Remove from heat and coat the chickpeas with the remaining BBQ sauce.
  3. Heat olive oil in a skillet over medium heat and warm the tortillas until golden brown and puffy.
  4. Assemble the tacos by layering the tortillas with chickpeas, slaw, and pickled onions.
  5. Serve with lime wedges.
