Roasted Chickpea Tacos

Ingredients

  • 1 can (15-ounce) chickpeas
  • 1 medium red bell pepper
  • 1 tablespoon extra-virgin olive oil
  • 1 ½ tablespoons taco seasoning
  • ½ teaspoon salt
  • 1 medium avocado
  • 1 tablespoon lime juice
  • 4 (7") corn tortillas

Instructions

  1. Preheat the oven to 425°F and line a baking sheet with parchment paper.
  2. Place chickpeas and bell pepper on the baking sheet, drizzle with oil, and toss to coat.
  3. Sprinkle with taco seasoning and 1 teaspoon of salt, then bake for 15-20 minutes.
  4. Remove from the oven, toss the chickpeas and pepper slices, and bake for an additional 10-15 minutes.
  5. Meanwhile, mash the avocado in a small bowl until smooth, then stir in lime juice and the remaining teaspoon of salt.
  6. Lay the tortillas flat, spread the avocado mixture on them, and top with the chickpea mixture. Serve immediately.
