Ingredients

The chickpeas

  • 1 15-ounce can chickpeas
  • 1 tablespoon olive oil
  • ½ teaspoon salt
  • ½ teaspoon ground cumin
  • ½ teaspoon paprika

The tacos

  • 1 medium red apple
  • 4 medium radishes
  • ¼ cup fresh cilantro
  • Juice from ½ lime
  • ½ teaspoon white sugar
  • 6 small tortillas
  • ½ cup hummus

Instructions

  1. Preheat the oven to 400°F.
  2. Dry the chickpeas with paper towels and place them on a baking sheet.
  3. Drizzle olive oil over the chickpeas and sprinkle with salt, cumin, and paprika.
  4. Roast the chickpeas for 20 minutes, shaking the pan halfway through.
  5. In a bowl, combine chopped apple, sliced radishes, cilantro, lime juice, and sugar.
  6. Warm the tortillas in the microwave or on the stove.
  7. Spread hummus on the warmed tortillas, top with roasted chickpeas and apple-radish slaw, and serve immediately.
