Instructions
- Preheat the oven to 400°F.
- Dry the chickpeas with paper towels and place them on a baking sheet.
- Drizzle olive oil over the chickpeas and sprinkle with salt, cumin, and paprika.
- Roast the chickpeas for 20 minutes, shaking the pan halfway through.
- In a bowl, combine chopped apple, sliced radishes, cilantro, lime juice, and sugar.
- Warm the tortillas in the microwave or on the stove.
- Spread hummus on the warmed tortillas, top with roasted chickpeas and apple-radish slaw, and serve immediately.
