Air Fryer Chickpea Tacos

Instructions
- Mix chickpeas with olive oil and taco seasoning until well coated.
- Place chickpeas and sliced red pepper in the air fryer, sprinkle with sea salt, and cook at 400°F for 12-18 minutes.
- While cooking, mash the avocado with lime juice and sea salt to taste.
- After the initial cooking time, toss the chickpeas and peppers, then cook for another 10-15 minutes.
- Assemble the tacos by spreading mashed avocado on tortillas and topping with the chickpea and pepper mixture.
- Serve immediately, optionally with sour cream and salsa.
