Ingredients

  • 1 can (15 ounces) chickpeas
  • Tablespoon taco seasoning
  • 1 Tablespoon extra virgin olive oil
  • 1 red bell pepper sliced
  • 1 medium/large avocado
  • 1 lime
  • 4 tortillas
  • to taste sea salt

Instructions

  1. Mix chickpeas with olive oil and taco seasoning until well coated.
  2. Place chickpeas and sliced red pepper in the air fryer, sprinkle with sea salt, and cook at 400°F for 12-18 minutes.
  3. While cooking, mash the avocado with lime juice and sea salt to taste.
  4. After the initial cooking time, toss the chickpeas and peppers, then cook for another 10-15 minutes.
  5. Assemble the tacos by spreading mashed avocado on tortillas and topping with the chickpea and pepper mixture.
  6. Serve immediately, optionally with sour cream and salsa.
