Smoked Pulled Pork

Instructions
- Preheat the smoker to 235°F and load with apple, cherry, or hickory wood.
- Apply a thin layer of yellow mustard to the pork and sprinkle the BBQ rub evenly over the meat.
- Place the pork in a disposable foil pan or directly on the smoker rack.
- Cook for 2 hours, brushing with apple juice once per hour.
- After 4 hours, check the internal temperature; when it reaches 160°F, brush with remaining apple juice.
- Wrap the pork in peach butcher paper or foil and increase the smoker temperature to 250°F.
- Smoke for another 3-4 hours until the internal temperature reaches at least 195°F, or up to 205°F for softer pulled pork.
- Remove from the smoker and let it rest wrapped for 10 minutes and unwrapped for 5 minutes.
- Shred the meat and toss with BBQ sauce before serving.
