Ingredients

Dill Aioli

  • ¼ cup plain Greek yogurt
  • 3 tablespoons mayonnaise
  • 1 medium lemon (juice)
  • 2 tablespoons fresh dill (chopped)
  • 1 clove garlic (minced)
  • ½ teaspoon onion powder
  • ½ teaspoon granulated sugar
  • ¼ teaspoon coarse salt
  • ¼ teaspoon ground black pepper

Asparagus Fritters

  • ½ pound fresh asparagus (trimmed and sliced)
  • ½ cup all-purpose flour or Panko breadcrumbs
  • ¼ cup milk or plain Greek yogurt
  • ¼ cup flat-leaf parsley (chopped)
  • 2 tablespoons fresh chives (chopped)
  • 2 large eggs (beaten)
  • 1 medium lemon (zest)
  • 1 teaspoon coarse salt
  • ½ teaspoon ground black pepper
  • ½ teaspoon dried oregano
  • ¼ teaspoon cayenne pepper

Instructions

  1. Make the aioli by whisking together all the aioli ingredients and refrigerate.
  2. Preheat the air fryer to 375°F.
  3. Blanch the asparagus in boiling water for 2-3 minutes, then transfer to ice water.
  4. Pat the asparagus dry and combine it with the fritter ingredients in a large mixing bowl.
  5. Coat the air fryer basket with cooking spray and drop dollops of the fritter batter into the basket.
  6. Cook the fritters for 8-12 minutes until set, repeating with remaining batter.
  7. Serve the fritters with the dill aioli.
