Shrimp Cakes

Ingredients

  • 1 cup red onion, chopped
  • 2 cloves garlic
  • 450 g defrosted raw shrimp, peeled and deveined
  • tsp salt
  • ¾ tsp pepper
  • ½ tsp chili flakes
  • ½ cup breadcrumbs
  • 1 zested lemon
  • 1 cup crumbled feta cheese
  • 1 egg
  • 1 tbsp olive oil

Instructions

  1. Chop the onion and garlic in a food processor.
  2. Add shrimp, salt, pepper, breadcrumbs, lemon zest, chili flakes, feta, and egg to the processor and pulse to combine without over-mixing.
  3. Scoop about ¼ cup of the mixture and form into ½ inch patties.
  4. Heat olive oil in a frying pan over medium heat.
  5. Fry the patties for 3-4 minutes on each side until golden brown.
  6. Continue frying in batches until all patties are cooked.
