Ingredients

The shrimp cakes

  • 1 lb shrimp, peeled and deveined
  • 1 large jalapeño, seeded and minced
  • 1 clove garlic, minced
  • 3 medium scallions, chopped
  • 2 tablespoons fresh cilantro, chopped
  • 2 tablespoons panko
  • ¼ teaspoon sea salt
  • teaspoon fresh ground black pepper

For topping

  • 4 pieces lime wedges
  • ½ medium avocado, sliced thin

Instructions

  1. Dry the shrimp with a paper towel and pulse in a food processor with jalapeño and garlic until almost pasty.
  2. Combine the shrimp mixture with the remaining ingredients in a large bowl and mix well.
  3. Using rubber gloves, form the mixture into 4 patties.
  4. Heat a non-stick skillet over medium heat and spray with oil.
  5. Cook the shrimp cakes for 4 minutes without disturbing, then gently flip and cook for another 4 minutes.
  6. Serve with fresh lime juice and top with thin slices of avocado.
