Jalapeño Shrimp Cakes

The shrimp cakes

shrimp, peeled and deveined

jalapeño, seeded and minced

fresh cilantro, chopped

For topping

avocado, sliced thin
Instructions
- Dry the shrimp with a paper towel and pulse in a food processor with jalapeño and garlic until almost pasty.
- Combine the shrimp mixture with the remaining ingredients in a large bowl and mix well.
- Using rubber gloves, form the mixture into 4 patties.
- Heat a non-stick skillet over medium heat and spray with oil.
- Cook the shrimp cakes for 4 minutes without disturbing, then gently flip and cook for another 4 minutes.
- Serve with fresh lime juice and top with thin slices of avocado.
