Spicy Baja Shrimp Tacos

Ingredients

The tacos

  • 20 medium shrimp
  • 2 tbsp olive oil
  • 1 fresh jalapeño
  • 2 strips thick cut bacon
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • 1 tsp Mexican oregano
  • 1 tsp onion powder
  • to taste salt
  • to taste pepper
  • 4 taco-sized tortillas

The slaw

  • cup sour cream
  • 1 tbsp hot sauce
  • 1/2 medium lime
  • ¼ tsp garlic powder
  • to taste salt
  • 2 cups thinly sliced red cabbage
  • handful fresh cilantro
  • ½ cup cherry tomatoes
  • 1 ripe avocado

Instructions

  1. Marinate shrimp and jalapeños in olive oil and spices for 20 minutes.
  2. Mix sour cream, hot sauce, lime juice, garlic powder, and salt; stir in cabbage and cilantro.
  3. Cook chopped bacon in a skillet until halfway crisp, then add marinated shrimp and jalapeños, cooking until shrimp is done.
  4. Warm tortillas and assemble tacos with slaw, shrimp, bacon, jalapeños, tomatoes, and avocado.
