Ingredients

Sweet Pepper Slaw

  • 2 large sweet peppers
  • ½ medium red onion
  • 1 cup shredded red cabbage
  • cup chopped cilantro

Avocado Greek Yogurt Sauce

  • ¼ cup Greek yogurt
  • ¼ large avocado
  • 2 teaspoons hot sauce
  • 2 teaspoons fresh lime juice
  • a pinch salt

Shrimp

  • 1 lb. large raw shrimp
  • 3 tablespoons taco seasoning
  • 2 tablespoons olive oil
  • ½ cup cherry tomatoes

Other Ingredients

  • 6-8 street taco flour tortillas

Instructions

  1. Prepare the slaw by mixing apple cider vinegar, jalapeño, olive oil, lime juice, and honey in a jar and shaking well.
  2. Combine sliced sweet peppers, red onion, shredded cabbage, and cilantro in a bowl and pour the dressing over. Mix well and refrigerate.
  3. For the avocado sauce, mash Greek yogurt and avocado together in a bowl, then mix in hot sauce, lime juice, and salt. Refrigerate.
  4. Season the shrimp with taco seasoning in a bowl and ensure they are well coated.
  5. Heat olive oil in a skillet over medium-high heat, then add the shrimp and cherry tomatoes. Cook shrimp until pink, flipping halfway through.
  6. Assemble the tacos by placing shrimp, avocado sauce, and slaw in tortillas.
