Ingredients

The shrimp and seasoning

  • 1 tablespoon olive oil or avocado oil
  • ½ teaspoon chili powder
  • ½ teaspoon ground cumin
  • ½ teaspoon garlic powder
  • ¼ teaspoon paprika
  • ¼ teaspoon sea salt
  • ¼ teaspoon ground black pepper
  • 1 pound large shrimp, peeled and deveined

The slaw and toppings

  • 2 cups shredded cabbage (mix of red and green)
  • ¼ cup cilantro, chopped
  • 1 lime juiced
  • 1 ripe avocado, cubed
  • ¼ cup sour cream (dairy-free if desired)
  • 8 small corn tortillas, warmed
  • optional toppings (lime wedges, sliced jalapenos, or salsa)

Instructions

  1. Mix the olive oil, chili powder, cumin, garlic powder, paprika, salt, and pepper in a medium bowl.
  2. Add the shrimp to the mixture and toss to coat.
  3. Cook the shrimp in a medium skillet over medium heat for 2-3 minutes on each side until cooked through.
  4. Transfer the shrimp to a covered dish to keep warm.
  5. In another bowl, combine the shredded cabbage, chopped cilantro, and lime juice.
  6. Assemble the tacos with cooked shrimp, avocado, slaw mixture, and sour cream.
  7. Add optional garnishes and serve hot.
