Instructions
- Whisk together all ingredients for the Cilantro-Lime Sauce in a bowl, season with salt and pepper, cover, and chill until ready to use.
- In a medium bowl, whisk together the spices for the shrimp, then add the shrimp and toss until evenly coated.
- Heat olive oil in a non-stick skillet over medium-high heat, add shrimp, and cook until opaque and cooked through, about 3-4 minutes, tossing halfway.
- Assemble the tacos by layering cabbage, shrimp, avocado, and Cotija cheese over warmed tortillas, and drizzle with the Cilantro-Lime Sauce.
