Ingredients

The Shrimp & Veggies

  • 1 tablespoon toasted sesame oil
  • ½ onion thinly sliced
  • 2 bell peppers any color, seeded, cored and thinly sliced
  • 1 pound shrimp, peeled, deveined, and patted dry
  • ¼ cup whole-wheat flour
  • 2 tablespoons olive oil
  • 2 tablespoons soy sauce
  • ¼ teaspoon crushed red pepper flakes

The Lime Chipotle Mayo

  • ½ cup mayo
  • 1 chipotle chile from a can of chipotle chiles in adobo sauce
  • 1 teaspoon adobo sauce
  • 2 teaspoons lime juice

Accompaniments

  • 8 corn tortillas store-bought or homemade
  • 12 oz crumbled queso fresco
  • 1 bunch cilantro

Instructions

  1. Heat sesame oil in a skillet over medium heat and cook the onions and peppers until softened.
  2. Coat the shrimp in flour and add them to the skillet once the veggies are ready.
  3. Cook the shrimp until curled, pink, and golden brown, then add soy sauce and red pepper flakes.
  4. Blend all mayo ingredients until smooth.
  5. Heat tortillas to soften and assemble tacos with shrimp, veggies, cheese, mayo, and cilantro.
