Shrimp Tacos

Ingredients

  • 1 pound shrimp, deveined/peeled
  • 2 pieces red bell peppers, thinly sliced
  • 4 slices bacon
  • 1 Tbsp avocado oil
  • 2 Tbsp lime juice
  • 1 Tbsp minced garlic
  • ½ tsp cumin
  • ¼ tsp salt
  • ½ tsp pepper
  • 8 pieces corn tortillas
  • 1 piece avocado
  • ¼ cup chopped cilantro

Instructions

  1. Heat avocado oil in a large skillet over medium heat.
  2. Sauté sliced bell peppers and minced garlic for 4-5 minutes.
  3. Cook bacon according to package instructions.
  4. Remove bell peppers from the skillet and add shrimp.
  5. Add lime juice, cumin, salt, and pepper to the shrimp, stirring well.
  6. Cook shrimp for about 3-4 minutes until pink and opaque.
  7. Add the bell peppers back to the skillet and sprinkle with cilantro.
  8. Heat tortillas in a damp paper towel in the microwave for 15-20 seconds.
  9. Divide shrimp, peppers, and bacon among the tortillas and top with remaining cilantro and avocado slices.
