Ingredients

The chicken

  • 2 medium boneless skinless chicken breasts
  • ¼ teaspoon salt
  • ¼ teaspoon pepper
  • 1 cup all-purpose flour
  • 2 large eggs
  • 2 tablespoons milk
  • 4 tablespoons olive oil

The sauce

  • ¼ cup butter
  • 2 large garlic cloves
  • ¾ cup chicken broth
  • ¾ cup dry white wine
  • ¼ cup fresh lemon juice
  • 2 tablespoons minced parsley

The pasta

  • 4 to 8 ounces fettuccine or pasta of choice

Instructions

  1. Preheat the oven to 200°F and prepare a baking sheet.
  2. Boil a pot of lightly salted water for the pasta.
  3. Slice the chicken breasts in half horizontally and pound to ¼-inch thickness.
  4. Season the chicken with salt and pepper.
  5. Prepare a flour mixture and an egg mixture in separate shallow dishes.
  6. Dredge each chicken piece in flour, then egg, and back in flour, shaking off excess.
  7. Heat oil in a skillet and cook the chicken until golden and cooked through, then transfer to the oven.
  8. Cook the pasta according to package instructions.
  9. In the same skillet, melt butter and sauté garlic until fragrant.
  10. Add broth, wine, and lemon juice, and simmer until reduced.
  11. Season the sauce with salt and pepper, stir in parsley, and serve over chicken and pasta.
