Ingredients

The chicken

  • 2 pieces boneless and skinless chicken breasts
  • 1 teaspoon salt
  • to taste freshly ground black pepper
  • ½ cup all-purpose flour
  • 1 teaspoon Italian seasoning
  • 1 teaspoon garlic powder
  • 2 large eggs
  • 2 tablespoons parmesan cheese
  • 1-2 large basil leaves, chopped
  • ¼ cup vegetable oil

The sauce

  • 2 tablespoons unsalted butter
  • 1 tablespoon all-purpose flour
  • 2 teaspoons minced garlic
  • ½ cup dry white wine
  • 1 cup low sodium chicken broth
  • ½ juice of a lemon freshly squeezed lemon juice
  • to taste salt
  • to taste black pepper
  • 1 teaspoon pepper flakes (optional)
  • 2 tablespoons parsley, chopped (for garnish)

Instructions

  1. Pound the chicken breasts to an even thickness and season with salt and pepper.
  2. Mix flour, Italian seasoning, and garlic powder on a plate.
  3. In a bowl, whisk eggs, parmesan, and basil.
  4. Dredge chicken in the flour mixture, then dip in the egg mixture.
  5. Heat oil in a skillet and cook the chicken until golden brown on both sides.
  6. Remove chicken and set aside.
  7. In the same skillet, melt butter, then add flour and garlic, cooking briefly.
  8. Pour in white wine and chicken broth, bring to a boil, then reduce heat.
  9. Add lemon juice and season the sauce to taste.
  10. Return chicken to the skillet and cook briefly before serving garnished with parsley.
