Simple Artichokes + Garlic Aioli

Instructions
- 1. Prepare the aioli by whisking the egg yolk, garlic, salt, and water in a metal bowl until foamy.
- 2. Slowly drizzle in the olive oil while whisking constantly until the mixture thickens.
- 3. Stir in cayenne, lemon juice, dijon mustard, and black pepper to taste. Cover and refrigerate.
- 4. For the artichokes, trim the stems and leaves as desired.
- 5. In a large pot, bring the broth to a simmer, adding lemon juice and herbs.
- 6. Add the artichokes stem up, cover, and simmer for about 30 minutes until leaves pull away easily.
- 7. Serve warm with aioli on the side.
