Ingredients

The zoodles and chicken

  • 3 whole Zucchini
  • 2 boneless skinless chicken breasts
  • to taste salt & pepper

The tomatoes

  • 1 ½ cups cherry tomatoes
  • 2 teaspoons olive oil
  • ½ teaspoon salt

The sauce

  • 1 batch Homemade Basil Pesto

Instructions

  1. Preheat the grill to medium-high heat.
  2. Season the chicken with salt and pepper on both sides.
  3. In a bowl, toss the cherry tomatoes with olive oil and salt.
  4. Inspiralize the zucchini and set aside.
  5. Make the basil pesto and mix it with the zucchini noodles until well combined.
  6. Grill the chicken for 5-7 minutes on each side until cooked through.
  7. Grill the cherry tomatoes in a basket for about 5 minutes until they burst.
  8. Slice the grilled chicken and combine it with the burst tomatoes and pesto zoodles before serving.
