Ingredients

The main ingredients

  • pounds chicken thighs (boneless and skinless, cut into 1½ or 2 inch dice)
  • 2 pieces zucchini (cut into 1 inch dice)
  • 1 pint cherry tomatoes (or grape tomatoes)
  • 8 ounces mushrooms (baby bella or shiitake)

The pesto

  • 1 cup basil (just the leaves, fresh)
  • 1 cup spinach (just the leaves, fresh)
  • cup Parmesan cheese (freshly grated)
  • ½ cup pine nuts (raw)
  • 2 cloves garlic (crushed)
  • ½ cup olive oil

Seasoning

  • to taste salt
  • to taste pepper

Instructions

  1. Cut foil into eight large pieces and stack them in a plus sign shape.
  2. Distribute the chunks of chicken, zucchini, tomatoes, and mushrooms evenly among the packets.
  3. Make the pesto by blending basil, spinach, Parmesan, pine nuts, garlic, and olive oil in a food processor until smooth.
  4. Spoon the pesto over the top of each packet and season with salt and pepper.
  5. Seal the packets by folding the edges of the foil together tightly.
  6. Grill the packets for 8-9 minutes on each side until the chicken is cooked through and the veggies are tender.
  7. Serve warm, optionally with whole-grain pasta or couscous.
