Pesto Chicken Grill Packets

Instructions
- Cut foil into eight large pieces and stack them in a plus sign shape.
- Distribute the chunks of chicken, zucchini, tomatoes, and mushrooms evenly among the packets.
- Make the pesto by blending basil, spinach, Parmesan, pine nuts, garlic, and olive oil in a food processor until smooth.
- Spoon the pesto over the top of each packet and season with salt and pepper.
- Seal the packets by folding the edges of the foil together tightly.
- Grill the packets for 8-9 minutes on each side until the chicken is cooked through and the veggies are tender.
- Serve warm, optionally with whole-grain pasta or couscous.
