Grilled Pesto Chicken Skewers

Ingredients

The chicken

  • 1 lb. boneless, skinless chicken breast

The pesto

  • ½ cup pesto

Instructions

  1. Preheat the grill to medium/high heat, around 375ºF.
  2. Slice the chicken into 1 to 1.5 inch chunks and place in a large bowl.
  3. Add the pesto to the bowl and toss the chicken until fully coated.
  4. Marinate the chicken in the fridge for 30 minutes to 2 hours.
  5. Skewer the marinated chicken pieces onto skewers.
  6. Place tin foil on the grill grates and spray with cooking spray.
  7. Grill the skewers for about 15-20 minutes, flipping every 5-8 minutes, until the internal temperature reaches 160ºF to 165ºF.
  8. Let the chicken rest for 5 minutes before serving.
