Grilled Pesto Chicken Skewers

Instructions
- Preheat the grill to medium/high heat, around 375ºF.
- Slice the chicken into 1 to 1.5 inch chunks and place in a large bowl.
- Add the pesto to the bowl and toss the chicken until fully coated.
- Marinate the chicken in the fridge for 30 minutes to 2 hours.
- Skewer the marinated chicken pieces onto skewers.
- Place tin foil on the grill grates and spray with cooking spray.
- Grill the skewers for about 15-20 minutes, flipping every 5-8 minutes, until the internal temperature reaches 160ºF to 165ºF.
- Let the chicken rest for 5 minutes before serving.
