Ingredients

The dough and chicken

  • 1 piece boneless chicken breast, diced
  • to taste salt & pepper
  • 1 recipe Homemade Whole Wheat Dough

The toppings

  • 2 cups shredded mozzarella cheese
  • 1 piece roasted red pepper, julienned
  • 1 recipe Homemade Basil Pesto

Instructions

  1. Make the Whole Wheat Pizza Dough.
  2. Preheat the grill to medium-high heat.
  3. Season the chicken breast with salt and pepper.
  4. Grill each chicken breast for 5-6 minutes on each side, then dice and set aside.
  5. Sprinkle the countertop with whole wheat flour and roll out the pizza dough to the desired size.
  6. Spray the grill surface with PAM or olive oil.
  7. Place the pizza dough on the grill and cook until bubbles form, about 4-5 minutes, then flip.
  8. Spread the pesto on the flipped pizza, add a tablespoon of cheese, then the diced chicken, julienned red peppers, and the remaining cheese.
  9. Close the grill cover and cook for another 5-6 minutes until the cheese is melted.
