Ingredients

Grilled Chicken

  • 1 large boneless chicken breast
  • to taste salt & pepper

Roasted Cherry Tomatoes

  • 1 pint cherry tomatoes
  • 1 teaspoon olive oil
  • to taste salt & pepper

Remaining Ingredients

  • 2 whole wheat naan flatbreads
  • 2 tablespoons olive oil
  • 1 clove garlic, minced
  • 1 cup mozzarella cheese
  • ½ cup fresh basil, chopped

Instructions

  1. Preheat the oven to 400°F.
  2. Place cherry tomatoes on a baking sheet, season with olive oil, salt, and pepper, and roast for 20 minutes.
  3. Season the chicken breast with salt and pepper, grill for 5-7 minutes on each side until cooked through.
  4. Remove chicken from the grill, let it rest, then slice thinly.
  5. Preheat the oven to 350°F.
  6. On a baking sheet, place the naan flatbreads and evenly spread olive oil, minced garlic, mozzarella cheese, sliced chicken, and roasted tomatoes on top.
  7. Bake for 8-10 minutes until the cheese is melted.
  8. Remove from the oven and sprinkle chopped basil over the pizzas before serving.
