Grilled Chicken Parmesan

Ingredients

The chicken

  • 24 ounces boneless skinless chicken breast
  • 2 tablespoons avocado oil
  • 2 teaspoons sea salt
  • 1 teaspoon dried Italian seasoning or oregano
  • ½ teaspoon fresh ground black pepper

The toppings

  • 1 cup marinara sauce
  • 8 ounces fresh mozzarella
  • ¼ cup fresh grated parmesan
  • to taste fresh basil or parsley

Instructions

  1. Brush the chicken with avocado oil and season with the salt, Italian seasoning, and black pepper.
  2. Let the chicken sit at room temperature for an hour or refrigerate overnight.
  3. Preheat the grill to medium-high heat.
  4. Grill the chicken for 3 minutes on each side.
  5. Spread marinara sauce over each piece of chicken and top with mozzarella slices.
  6. Cover and cook until the cheese melts and the chicken reaches an internal temperature of 160°F.
  7. Remove from the grill, top with grated parmesan, and let rest for 5 minutes before serving.
  8. Serve with remaining marinara on the side.
