Ingredients

The chicken and coating

  • 1 tablespoon olive oil or avocado oil
  • 2 tablespoons flour
  • ¼ teaspoon garlic powder
  • ¼ teaspoon fine salt
  • 1 pinch black pepper
  • 1 pound boneless, skinless chicken breasts
  • 1 serving cooking spray

The sauce and cheese

  • 1 jar (24 oz) Primal Kitchen Tomato Basil Marinara Sauce
  • ½ cup shredded mozzarella cheese
  • ¼ cup shredded Parmesan cheese
  • 1 serving fresh basil, thinly sliced

Instructions

  1. Heat a large skillet over medium-high heat and add the oil.
  2. In a shallow bowl, mix flour, salt, garlic powder, and pepper. Coat each piece of chicken in the flour mixture.
  3. Place the chicken in the skillet and mist lightly with cooking spray. Cook for 4 minutes on each side until golden brown.
  4. Pour the marinara sauce around the chicken and lift the chicken slightly to allow sauce underneath.
  5. Sprinkle mozzarella and Parmesan cheeses over the chicken. Cover and cook for 5 minutes until the sauce is hot and chicken is cooked through.
  6. Remove from heat, sprinkle with fresh basil, and serve over spaghetti squash or pasta.
