Ingredients

  • 2 pieces skinless chicken breasts
  • ½ cup almond meal
  • ½ cup parmesan cheese, grated
  • 2 tsp Italian seasoning

  • to taste pepper
  • 1 piece egg
  • to taste cooking oil (olive oil recommended)
  • ½ cup mozzarella cheese, shredded
  • ¾ cup marinara sauce (Raos recommended)

Instructions

  1. Preheat the oven to 400°F and line a sheet pan with parchment paper.
  2. Slice the chicken breasts in half horizontally to create 4 thinner pieces and pound them to flatten.
  3. In a bowl, combine almond meal, parmesan cheese, Italian seasoning, salt, and pepper.
  4. In another bowl, beat the egg.
  5. Dip each piece of chicken in the egg, then coat with the almond meal mixture.
  6. Place the coated chicken on the parchment paper and spray the tops with cooking oil.
  7. Bake the chicken for 15 minutes, ensuring the internal temperature reaches 165°F.
  8. Remove from the oven, add marinara sauce on top, and sprinkle with mozzarella cheese.
  9. Bake for an additional 5-8 minutes until the cheese is melted.
  10. Allow the chicken to cool before serving.
