Instructions
- Preheat the oven to 400°F and line a sheet pan with parchment paper.
- Slice the chicken breasts in half horizontally to create 4 thinner pieces and pound them to flatten.
- In a bowl, combine almond meal, parmesan cheese, Italian seasoning, salt, and pepper.
- In another bowl, beat the egg.
- Dip each piece of chicken in the egg, then coat with the almond meal mixture.
- Place the coated chicken on the parchment paper and spray the tops with cooking oil.
- Bake the chicken for 15 minutes, ensuring the internal temperature reaches 165°F.
- Remove from the oven, add marinara sauce on top, and sprinkle with mozzarella cheese.
- Bake for an additional 5-8 minutes until the cheese is melted.
- Allow the chicken to cool before serving.
