Ingredients

The chicken

  • 6 small chicken breasts
  • ½ teaspoon salt
  • 2 cups almond flour
  • 3 large eggs
  • ½ cup parmesan cheese
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • 2 tablespoons oil

The toppings

  • 2 cups keto marinara sauce
  • cups mozzarella cheese
  • cup parmesan cheese

Instructions

  1. Pound the chicken breasts to ¼ inch thickness and sprinkle with salt.
  2. Coat the chicken with almond flour.
  3. Whisk the eggs in a bowl and mix parmesan cheese, garlic powder, onion powder, and remaining almond flour in another bowl.
  4. Dip the chicken in the egg mixture, then coat with the dry mixture.
  5. Heat oil in a pan and fry the chicken until golden brown on both sides.
  6. Preheat the oven to 200C/400F and line a baking sheet with parchment paper.
  7. Place the fried chicken on the baking sheet, top with marinara sauce, mozzarella, and parmesan cheese.
  8. Bake for 10-15 minutes until the cheese is melted and golden.
