The Finishing Ingredients

Instructions
- Let the chicken rest at room temperature for 20-30 minutes, then dry and pound to an even thickness. Season with salt and pepper.
- Preheat the oven to 350°F and heat a cast iron skillet over medium heat.
- Prepare the breading mixture by mixing the dry ingredients on a plate and beating the eggs in a bowl.
- Coat each chicken piece in the egg, then in the crumb mixture, and place in the skillet.
- Cook the chicken for 3 minutes undisturbed, then flip and sprinkle with any remaining crumb mixture and sauce.
- Transfer the skillet to the oven and bake uncovered for 15-20 minutes.
- Top with mozzarella and additional Parmesan, cover with foil, and bake for an additional 5 minutes until the cheese melts.
- Let rest for several minutes before serving.
