Ingredients

The Chicken

  • 1 ½ pounds boneless-skinless chicken breasts
  • to taste salt
  • to taste pepper
  • 2 tablespoons olive oil

The Breading Mixture

  • ½ cup grated Parmesan cheese
  • 1 cup crushed pork rinds
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • ¼ teaspoon granulated garlic
  • ¼ teaspoon granulated onion
  • ¼ teaspoon salt
  • ¼ teaspoon pepper
  • 2 large beaten eggs

The Finishing Ingredients

  • 2 cups low carb Marinara Sauce
  • 6 ounces fresh mozzarella cheese
  • ½ cup grated Parmesan cheese

Instructions

  1. Let the chicken rest at room temperature for 20-30 minutes, then dry and pound to an even thickness. Season with salt and pepper.
  2. Preheat the oven to 350°F and heat a cast iron skillet over medium heat.
  3. Prepare the breading mixture by mixing the dry ingredients on a plate and beating the eggs in a bowl.
  4. Coat each chicken piece in the egg, then in the crumb mixture, and place in the skillet.
  5. Cook the chicken for 3 minutes undisturbed, then flip and sprinkle with any remaining crumb mixture and sauce.
  6. Transfer the skillet to the oven and bake uncovered for 15-20 minutes.
  7. Top with mozzarella and additional Parmesan, cover with foil, and bake for an additional 5 minutes until the cheese melts.
  8. Let rest for several minutes before serving.
