Ingredients

The pesto

  • ¼ cup pine nuts
  • 1 clove garlic
  • 2 tablespoons olive oil

The pizza

  • 1 recipe pizza dough
  • 1 can pizza sauce
  • 8 ounces mozzarella cheese
  • 2 cups cooked chicken
  • 2 roma tomatoes thinly sliced

Instructions

  1. Make the pesto by blending kale, basil, parmesan, pine nuts, garlic, and olive oil until smooth.
  2. Roll out the pizza dough into two large rounds and pinch the edges to form a crust.
  3. Spread a thin layer of pizza sauce over the dough and sprinkle mozzarella cheese on top.
  4. Add the cooked chicken and pesto mixture, then arrange the tomato slices on top.
  5. Bake according to the pizza dough instructions and top with extra parmesan if desired.
