Ingredients

Pizza

  • 1 batch easy whole wheat pizza dough or store-bought pizza dough (1 pound)
  • 2 cups grated low-moisture part-skim mozzarella cheese
  • 1 cup lightly packed kale, chopped
  • 1 teaspoon olive oil
  • to taste red pepper flakes (optional)

Kale Pesto

  • 3 cups packed kale, thick ribs removed
  • ¾ cup pecans or walnuts
  • 2 tablespoons lemon juice
  • 2 to 3 cloves garlic
  • ¾ teaspoon fine-grain sea salt
  • to taste freshly ground black pepper
  • ½ cup olive oil

Instructions

  1. Preheat the oven to 500°F and prepare your baking surface.
  2. Make the pesto by blending kale, nuts, lemon juice, garlic, salt, and pepper in a food processor, then drizzle in olive oil until smooth.
  3. Prepare the pizza dough according to your recipe or package instructions.
  4. Roll out the dough and spread a layer of pesto on top.
  5. Sprinkle mozzarella cheese over the pesto and prepare the kale topping by tossing chopped kale with olive oil and salt.
  6. Distribute the kale topping evenly over the pizza.
  7. Bake the pizza until the crust is golden and the cheese is bubbly, about 10-12 minutes.
  8. Serve hot, optionally garnished with red pepper flakes.
