Ingredients

Kale Pesto

  • 2 cups kale, washed and de-stemmed
  • ½ cup pecans
  • 2-3 tablespoons olive oil
  • 4 cloves roasted garlic
  • 1 teaspoon fine sea salt
  • 1 teaspoon ground black pepper

Pizza

  • 1 piece pizza dough
  • 1½ - 2 cups vegan mozzarella cheese shreds
  • 1 large tomato, sliced
  • 1 cup roughly chopped kale, washed and stems removed
  • 2 teaspoons olive oil

Optional Toppings

  • to taste crushed red peppers

Instructions

  1. Make the kale pesto by blending kale and nuts in a food processor until combined.
  2. Add olive oil, roasted garlic, salt, and pepper, then blend until smooth.
  3. Preheat the oven to 500°F (260°C).
  4. Spread the kale pesto over the pizza dough.
  5. Top with mozzarella cheese, tomato slices, and chopped kale.
  6. Drizzle olive oil over the top.
  7. Bake for 8-12 minutes until the cheese is bubbling and the kale is crisp.
  8. Remove from the oven, let cool slightly, slice, and serve.
