Ingredients

The pesto

  • 1 bunch kale (Lacinato or curly), stems removed
  • ¾ cup raw walnuts
  • 2 tablespoons lemon juice
  • 3 cloves garlic
  • ¾ teaspoon fine sea salt
  • ¼ cup extra-virgin olive oil
  • as needed water to blend

Pasta suggestions

  • 12 ounces linguine
  • 1 tablespoon olive oil
  • 1 cup cherry tomatoes, sliced in half
  • ½ red onion chopped

Instructions

  1. Combine kale, walnuts, lemon juice, garlic, salt, olive oil, and water in a food processor and blend until smooth.
  2. Adjust the flavor and texture as needed by adding more water or salt.
  3. While the pesto is blending, cook the pasta according to package directions in salted water.
  4. In the same pot, heat olive oil and sauté the onion and tomatoes until softened.
  5. Add the cooked pasta and pesto to the pot, tossing to combine and heat through.
  6. Serve warm.
