Instructions
- Combine kale, walnuts, lemon juice, garlic, salt, olive oil, and water in a food processor and blend until smooth.
- Adjust the flavor and texture as needed by adding more water or salt.
- While the pesto is blending, cook the pasta according to package directions in salted water.
- In the same pot, heat olive oil and sauté the onion and tomatoes until softened.
- Add the cooked pasta and pesto to the pot, tossing to combine and heat through.
- Serve warm.
