Kale Pesto

Ingredients

  • 3 cups torn curly kale leaves
  • ½ cup parsley leaves
  • cup grated parmesan cheese
  • 1 tsp lemon zest
  • cup walnuts
  • 1 large garlic clove
  • ¼ tsp salt
  • 3 Tbsp fresh lemon juice
  • 1 to 3 Tbsp water
  • cup extra virgin olive oil

Instructions

  1. Add kale, parsley, parmesan, lemon zest, walnuts, garlic, and salt to a food processor and pulse until finely minced.
  2. Add lemon juice and 1 Tbsp of water, then cover and pour in the olive oil while the processor is running.
  3. Thin the pesto with additional water as needed.
