Kale Pesto

Ingredients

  • ½ cup toasted walnuts
  • ½ cup grated Parmesan cheese
  • 2 cloves garlic
  • 2 cups lacinato or dinosaur kale leaves
  • 10 leaves fresh sage
  • ½ cup extra-virgin olive oil
  • 1 tablespoon fresh lemon juice
  • ½ teaspoon kosher salt
  • ½ teaspoon freshly ground black pepper

Instructions

  1. Toast the walnuts in a dry skillet or in the oven until aromatic.
  2. In a food processor, combine toasted walnuts, Parmesan cheese, and garlic, and process until finely minced.
  3. Add kale and sage to the mixture and process until chopped.
  4. With the processor running, drizzle in the olive oil until emulsified.
  5. Add lemon juice, salt, and pepper, then blend again and adjust seasoning to taste.
